It wouldn’t be Christmas without olive oil on the table. It’s almost a hallmark of the season. A good olive oil intensifies flavors and lifelong memories. It evokes tradition and reminds us that some things should never change — and thankfully so.

From sopa de galets and escudella i carn d’olla in Catalonia, to caldo con pelotas in Murcia and the Balearic Islands, from Galician seafood to sea bream and prawns, and even the classic asado madrileño — every dish welcomes a good olive oil with enthusiasm. This is who we are. This is who we want to remain.

NaturaleBio olive oil is, quite literally, a toast to the holidays and to tradition. Sourced directly from Castilla–La Mancha — the land of Don Quixote and centuries-old olive trees — it carries the same unhurried rhythm that has shaped this region for generations: patience, craftsmanship, and respect for the natural growth of the olive.

Where Our Story Begins

As a nutritionist, I have always seen olive oil as more than a culinary ingredient. It is a symbol of nourishment, balance, and longevity — the very essence of the Mediterranean lifestyle.

When we first visited Villanueva de los Infantes, walking through the olive groves and speaking with the farmer and the cooperative, we knew instantly that we had to bring this treasure to our community: our NaturaleBio customers and friends.

Our brand has always stood for nature, purity, origin, and tradition — and this olive oil fits that philosophy perfectly.

A Respectful Production Process

Our olive oil is obtained exclusively through cold extraction, without chemicals or heat that could compromise the integrity of the fruit. Its acidity remains below 0.8%, reflecting purity and a clean, well-defined flavor.

We blend Cornicabra and Picual olives, harvested in a region certified under the Campos de Montiel Protected Designation of Origin, ensuring authenticity from grove to tin.

The packaging reflects this same respect: a lightweight, durable, 100% recyclable tin that completely blocks light and preserves freshness, aroma, and polyphenols from the first drop to the last. A tin that looks right on any table and evokes the rustic, authentic character of our oil.

What Makes This Functional Food So Special?

1. Superior Lipid Profile: Rich in Oleic Acid (C18:1 n-9)

Extra virgin olive oil is dominated by monounsaturated fatty acids, particularly oleic acid, which represents 70–80% of total fat content in Cornicabra and Picual varieties.

Clinical research shows that diets rich in oleic acid:

  • Reduce LDL cholesterol oxidation
  • Maintain or increase HDL cholesterol
  • Support endothelial function

These effects contribute to a lower risk of cardiovascular events compared to diets high in saturated fats or refined oils.

2. High Polyphenol Content and Anti-Inflammatory Activity

Our EVOO contains a unique spectrum of phenolic compounds:

  • Oleocanthal (responsible for the peppery sensation in the throat)
  • Oleacein
  • Hydroxytyrosol and tyrosol
  • Secoiridoids derived from oleuropein

Regular consumption of polyphenol-rich olive oil is associated with reduced inflammatory markers, including CRP (C-reactive protein) and IL-6 (interleukin-6).

3. Powerful Antioxidant Capacity

Polyphenols, vitamin E (α-tocopherol), and minor compounds such as squalene act synergistically to:

  • Reduce oxidative stress
  • Protect lipids from peroxidation
  • Strengthen cellular defense mechanisms

Our Picual–Cornicabra blend provides an exceptionally high phenolic content, responsible for its antioxidant and anti-inflammatory properties.

4. Supports a Healthy Glycemic Response

EVOO positively influences glucose metabolism:

  • Slows gastric emptying, leading to more stable post-meal glucose peaks
  • Improves insulin sensitivity
  • Reduces postprandial oxidative stress and inflammation

When consumed with carbohydrate-rich meals, postprandial blood glucose and insulin levels are significantly lower.

5. Improves Digestion and Nutrient Absorption

Olive oil stimulates bile secretion and pancreatic enzymes, supporting efficient digestion of fats and fat-soluble vitamins (A, D, E, and K).

Its gentle polyphenols also exert a prebiotic effect, modulating gut microbiota and supporting intestinal integrity.
